Avocado and Beet Salad

The Woodford Folk Festival is located in Queensland, known as Australia’s “Sunshine State” because it averages over 300 days of sunshine a year. In addition to great seafood there is an abundance of fresh fruits and vegetables. If you are camping at the festival, take an afternoon to shop at one of the great local farmers markets for this refreshing Avocado and Beet Salad with Citrus Vinaigrette. The inspiration comes from the climate of Northern California, but it works just as well for Queensland.

You can prepare the beets and vinaigrette in advance and slice up the avocado (or kumquats and grapefruit) at your campsite for a delicious treat to welcome in the New Year.
