The Roots N Blues N BBQ Festival knows that BBQ is not just food, it’s a competitive sport. The contest, sanctioned by the Kansas City BBQ Society, awards $15,000 in cash prizes to winners in categories ranging from beef brisket to dessert.
We’re not pulling any punches with this recipe for Bone-in Pork Butt. It uses the most coveted cut of meat for BBQ (it’s the shoulder, not the other part you were thinking of) and incorporates apple and hot pepper for a roller coaster of flavor.
